The ancestral caves Marc Chauvet

It is in the freshness of our hand dug cellars that time does its work. Quiet, dark and calmly fresh, they are home to thousands of bottles of Champagne Marc Chauvet, which slowly acquire their full maturity.

Vaulted and carved in the chalk, they form a true Cathedral dedicated to champagne. From light, calm, bottles remain underground for a long period of maturation that lasts several years, constant(12 °C) temperature and humidity.

With this composition and the development process the wines of Champagne have excellent ageing. The ageing of a wine of Champagne is a continuous process, which begins in stainless steel tanks, after alcoholic fermentation, and continues slowly in the bottle in our cellars of Champagne, so special, with their walls of chalk. The regulation imposes the bottles to stay in the cave for a minimum of 15 months for non-vintage wines, and 3 years for the rarities, from the date of bottling. At Marc Chauvet, they don’t hesitate to extend this period for a few additional years to get the quintessence of the champagne.
